Rethink logging

We may want to be able to enable logging of some of the steps that happen in the query method
* structured logging of data, e.g. the full litellm completion parameters (without API key!) or the complete response
* textual logging
* logging for different aspects of what is happening, e.g. just the tooling invocations and return values, structured or textual
* logging/tracking of cost (structured)
