Changes for Zammad 7.0

• Add support for restore mode #491
• RAILS_TRUSTED_PROXIES now supports hostnames. We should adapt it in our scenarios with a custom proxy, like cloudflare / nginx-proxy-manager.
• Switch to Elasticsearch 9 (?)
• Docker stack cannot run Rails without using the docker entrypoint zammad#5685
• consider dropping the docker compose version string (Removing deprecated Docker Version String from compose file #509)
• add support for Redis Sentinel variables (Add support for Redis Sentinel variables #510)
