Adjust project-wide versioning settings

- use marketing_version
- use current_project_version
- adjust iOS deployment target to >= 12.0

I guess it would be even nice to specify some little github action to sync the marketing version and current project version information with the latest tag versions?

any opinions @tknoelle @benjohnde ?
