There is no schema for gather_exif that you are using in media_entity_image_demo/config/install/media_entity.bundle.image.yml and should be of type Boolean not string. |

I see no reason why Media Entity Image should not provide the image bundle by default, so I have pulled this out of Media Pinkeye.
