Updates 2025

[betolink]

This PR brings updates in the environment file and is locked for 3 platforms, OSX, Windows and Linux.

• earthaccess installed from github for now until we have a release
• Jupyterlab pinned to 4.3 to avoid flickering rendering issues
• xarray pinned to <=2025.06

@betolink couple quick questions - was it Jupyter lab 4.3 or 4.2 that doesn't have the code cell bug? And does xarray 2025.06 have xarray.DataTree?

xarray 2025.06 has datatree and I think issues with Jupyterlab started in 4.4.x
